Iced Coconut Chai Latte

With so many people asking and emailing me for the Iced Coconut Chai Latte recipe, I thought the best thing to do was place it on my blog. This way we can all share this beautiful drink, that goes so well with a spicy meal or served on a warm summers evening with friends. Have a go! Enjoy!
Iced Coconut Chai Latte
Ingredients to produce one litre:
600ml boiling water
400ml coconut milk
20g of your favorite spiced chai tea blend (not syrup or sugar based mixes) Approx 20g white sugar or the equivalent of your preferred sweetener.
The amount of water to coconut milk can be adjusted to suit your individual taste, if you want it less watery increase the coconut milk and decrease the water.
For decoration: optional choice
crushed ice
straw
toasted desiccate coconut
small cinnamon stick
kaffir lime leaf
place the spice tea in a pot or bowl which will hold comfortably 600ml of boiling water.
pour the boiling water over the tea and allow to brew for at least five or six minutes ( I leave mine 8 minutes, its a taste thing!), to create a strong infusion.
add the white sugar or sweetener of your choice to the infusion, and stir allowing it to dissolve.
place the 400ml of coconut milk in a bowl or jug which will hold over one litre.
strain the sweetened infusion to the coconut milk and mix well.
taste to make sure it’s sweet enough. You can always add a little more dissolved sugar if required later.
cover with a lid or plate and place in a refrigerator.
place ice (crushed is fantastic but not necessary) in a glass and pour coconut chai over.
decorate with a cinnamon stick and/or a Kaffir lime leaf and/or toasted desiccated coconut.
